• Colour: The colour is naturally uneven and may show minor specks or variations, which are flecks of the natural skin or bran still attached. The colours are typically deeper and more natural compared to the uniform, bright colour of polished dal.
• Texture: When rubbed in your palm, unpolished dal feels slightly coarse or rough, not perfectly smooth.
• Aroma: It often has a natural, earthy, and sometimes subtle nutty aroma, rather than being completely odourless.
